Who doesn’t love comfort food?
Creamy Tomato Basil Soup and Grilled Cheese

Cook Time: 30 minutes
Ingredients:
1 large can of Tomato Sauce
2 large cans of diced tomatoes
1 can of Tomato Juice
1 pint of heavy whipping cream
1 stick unsalted butter
1 small onion
½ parmesan cheese
Fresh basil leaves
Loaf of sour dough bread
Sliced smoked white cheddar cheese
Recipe steps:
Melt butter in a saucepan over medium heat, add onions and cook until clear
Add Diced tomatoes, saute for 5 minutes on medium heat
Add, basil, tomato sauce and tomato juice
Add to a blender or use an immersion blender to smooth
Add Heavy Whipping Cream
Add Salt and pepper to taste, simmer for 30 minutes
Slice Sourdough bread
Butter both sides of all slices
Place one side down and brown then flip, add cheese and another slice, cook on medium low, then flip
Take out when cheese is melted.
Ladle soup into bowl, add extra parmesan cheese and fresh basil.
Dip grilled cheese and enjoy
